Top chef’s ‘grub’ with a difference

A Michelin starred chef has put an unusual ingredient on the menu - insects.

David Faure has started included a number of creepy crawlies in the dishes he serves up at his restaurant Aphrodite in Nice, France.

This includes a dessert utilizing crickets for their ‘popcorn’ flavor and mealworms adding nutty tones to a cod dish.

Faure came up with the idea after traveling to countries where insects are a normal part of the everyday diet.

His insect-themed “alternative foods” three course menu costs 59 euros and is aimed at more adventurous diners.

According to the chef his biggest obstacle has been finding a reliable local supplier of edible insects rather than buying from Asia. However, he has since found a company in Toulouse that raises its insects on organic vegetables and meal.

The UN recently released a report promoting insects as food and listing their benefits.
